ingredients

  • dairy
    • white gelato dairy base
    • 100 g coarsely ground dark roast robusta coffee beans
  • custard (see emulsifiers)
    • 100 g egg yolks
    • 200 g sugar
    • 100 g condensed milk
  • 1 g salt
  • stabilizer

instructions

  1. hot infuse dairy with coffee grounds for 15 min. strain beans from dairy using cheesecloth
  2. proceed with custard gelato instructions
