  1. heat water and sugar to create syrup. steep and muddle mint in syrup to extract flavor, about 15 minutes
  2. add half and half and reduce to 500 ml. strain
  3. proceed with white ice cream template instructions
  4. while base is churning, melt dark chocolate and butter on double boiler
  5. ~5 minutes before base is finished churning, pour in melted chocolate mixture
